Shar-Ketos

We made a Sharketo version of taquitos a couple nights ago and they were AMAZING! They are also pretty simple really. These are basically zero carbs- maybe 1 or 2 in the cheese and sour cream but it’s well worth it!

STUFFING INGREDIENTS

1 lb ground beef
1 cup diced yellow onion
3 cloves minced garlic
1 tsp salt
1.5 tsp cumin
½ tsp chili powder
½ tsp cayenne
2 tsp paprika
1 tsp dried oregano

SHELL INGREDIENTS

2 cups parmesan
1 cup Mexican-blend cheese

DIRECTONS:

You are basically just making “taco” type meat for the inside of the Shar-Keto so you can use premade no sugar taco seasoning if you want. You can use any seasoning you want really…use less of certain things to make it less spicy.

You brown the hamburger while crumbling it up- then add the ingredients.

Mix up the parmesan and Mexican-blend cheese- using parmesan helps remove moisture.

You are basically going to make little circles of cheese in the pan and let them cook until the cheese is melted and the bottom is starting to get brown.

We slid the cheese shells off onto wax paper- this helps to roll them. This works better if two people are doing it- one can roll while the other makes the next shell.

You put a thin line of meat on the edge of the shell and start rolling- this part takes some time because you don’t want to get burned but if you wait too long, the cheese will start getting crunchy and impossible to roll.

I used an oven mitt and slowly rolled the cheese over the meat using the wax paper and slightly squeezing it as I rolled to make it as tight as possible.

We then moved them over to some paper towels to help remove all the extra grease.

As they cool- the cheese gets harder and crunchy and you can pick them up and dip them in sour cream.

These are going to become weekly treats- without a doubt…seriously delicious!!!
