Buffalo Wings… Sort Of..

These are amazing and have quickly become a favorite! They are really tasty and a healthy substitute buffalo wings!


Makes 2 Servings – 427 calories per serving

5 oz Mild Wing Sauce
4 oz All Purpose Gluten Free Baking Flour
1 tsp Garlic Powder
.5 tsp Salt
.5 tsp Light Margarine
.5 c Water
8 c Raw Califlower

Preheat oven to 450F. In a medium size bowl, combine flour, water, garlic powder and salt.

Whisk together until smooth. Toss cauliflower into batter making sure to coat each piece completely, then place battered cauliflower on a lightly greased, non-stick baking sheet. Bake for 15 minutes, tossing half way through.

In the meantime, combine melted butter and hot sauce in a large bowl, stirring. When cauliflower is done, remove it from the oven and gently toss it in the hot sauce mixture. Place cauliflower back on the baking sheet and cook for an additional 25 minutes or until it becomes crispy. Allow cauliflower to cool for 15 minutes before serving.


2 Servings – 84 calories per serving

2 tsp Light Mayo
14 g Reduced Fat Crumbled Bleu Cheese
.33 c Fat Free Sour Cream
1 tbsp Skim Milk

Mix it all up and let it chill in the refrigerator for about 30 minutes.

Chicken Lazone

This recipe was suggest by a friend; we took the original and tweaked it to make it healthier…it is delicious!


2 Servings – 456 calories per serving

1.5 tsp Onion Powder
2 tsp Garlic Powder
1.5 tsp Chili Powder
1 tsp Salt
8 oz Chicken Breast Tenderloins
.25 c Light Margarine
6 oz Smart Taste Thin Spaghetti
1 c Fat Free Half & Half

Coat the chicken with the spice mixture and cook, over medium heat, along with the butter. Once the chicken gets done, you add the half and half and the rest of the butter and let it get thick.

Cook the spaghetti noramally.

Fiesta Chicken


4 chicken breast, thawed
1 can black beans, drained and rinsed
1 jar of your favorite salsa
1 can sweet golden corn, no salt added
1 block fat free cream cheese

1 package of Fiesta Ranch Dressing mix or your own taco seasonings

Cook all ingredients, except cream cheese, on high in the slow cooker for 4 hours or 6 on low. Add cream cheese for the last 30 minutes. Shred chicken with fork and eat over rice or tortillas.
