Not Reese’s Chocolate PB Chunks
The wife found a cool little recipe last night and then adapted it a bit to make it her own and came up with some AMAZING peanut butter cup like candy!
Now- to get the best effect of Sharketo you need to stick to meat, veggies and some dairy BUT I have a really bad sweet tooth and stuff like this really helps get me through.
It’s made with the better sugar substitutes and adds a lot of fat to your MACROS- you just don’t want to eat the entire pan at one time! These should be spread out of a week or so.
(FYI- we halved this recipe in order to “test” it out but next time we will make the full recipe now that we know it’s amazing!)
½ c butter
1 c crunchy peanut butter
1 c confectioners erythritol
1/8 tsp liquid stevia
1 tsp vanilla extract
3.5 oz 100% dark chocolate bar
NOTES* of course you can use any peanut butter but the crunchy really added to the texture. You can also use a different percent dark chocolate bar but watch the carbs as you go down.
Melt butter and peanut butter in the microwave, stirring every 30 seconds until it’s melted and mixed.
Add erythritol, stevia and vanilla and stir until smooth.
Pour into a pan- size depends on the thickness you want your pieces to be.
Place in freezer for 10 minutes.
Melt the chocolate in the microwave, stirring every 30 seconds until it’s melted. Depending on the percent of chocolate- this may be more “smooth” or “dry”.
Remove peanut butter from freezer and pour/spread the chocolate evenly on top- spreading it so that it covers the peanut butter and makes a 2nd layer.
Place in freezer for roughly 1 hour.
Cut and enjoy! (store in refrigerator)
NOTES* we are not patient people so we didn’t wait the full hour- you can wait less time if you don’t mind to eat broken pieces (AKA chunks) or less firm pieces- non square pieces.
