We started out trying to make low carb fudgesicles and ended up making something amazing that can be eaten in a couple of ways.
In the south we have “Chocolate Gravy” which sounds nasty on biscuits but it’s pretty amazing and this stuff had a great taste that will be great eaten warm- over low carb biscuits. It’s also great letting it get about half way frozen to eat as a type of soft serve ice cream and finally, you can leave it in the freezer for about 8-10 hours (basically overnight) and have some incredible Fudgesicles!
Makes 8 servings
1 1/2 c Heavy Whipping Cream
2 1/2 oz Bakers Chocolate (chopped)
1/3 c Erythritol
2 Large Eggs
1 c Unsweetened Chocolate Almond Milk
1 tsp Vanilla Extract
2.1g Net Carbs
Mix everything except the Unsweetened Chocolate Almond Milk and Vanilla Extract in a saucepan on medium low until it starts to simmer. Remove from heat and stir in Unsweetened Chocolate Almond Milk* and Vanilla Extract.
*Leave out Unsweetened Chocolate Almond Milk if using as Chocolate Gravy.
-Pour over biscuits if eating as Chocolate Gravy- it’s best to eat it warm/hot.
-Place in a large bowl and place in freeze until slightly frozen, if eating as soft serve.
-Pour into popsicle molds and freeze overnight for Fudgesicles.
