Jalapeno Poppa Chicken
This has quickly become a family favorite and it’s so simple a shark could do it!
Here are the ingredients-
You cut up the chicken and brown it in a skillet with the olive oil.
Then you throw everything into the skillet and cook it on medium until it gets all cheesy and boom- that’s literally it.
We like to cut up the jalapeno’s but that isn’t a must- do what you like.
Here are the MACROs for ONE serving and it’s quite a bit-
We like to use it as a topping on a baked potato and then I just eat half of it one day and have the other half the next day for lunch. The potato ups the carbs and helps to even everything out but if you are on keto then forget the potato and just eat this in a bowl.
We have also toasted two pieces of bread and used this as a filing for a panini for our son- who is more of a picky eater than we are.
Finally be sure to add a little bit of sour cream- in the shape of a shark fin…or any other shape you like!
