Loaded Sharkiflower

This recipe still needs a little work due to the consistency- every time we make it it’s a bit thin so it’s a work in process but we aren’t giving up…all in all it was pretty tasty.

Sadly, no pic of this…I mean, you know what smashed cauliflower should look like, so picture that with cheese, chives and bacon on the top.

Makes 6 servings

1 bag frozen “steambag” cauliflower
4 oz sour cream
1 cup grated cheddar cheese
1 tbsp real bacon bits
1 tbsp dried chives
3 tbsp butter
1/4 tsp garlic powder
salt and pepper to taste

Steam the cauliflower in the microwave based on the directions on the bag. You may need to squeeze a little water out of the cauliflower after- even try to bake it for a few minutes to help remove the water- this should help with the consistency issue.

Add the cauliflower to a food processor and process until fluffy. Add the butter, garlic powder and sour cream and process until it resembles the consistency of mashed potatoes.

Put the smashed cauliflower in a bowl and add the chives, cheese and bacon to the top and place in the oven for a few minutes just to melt the cheese.
