Sharketo Spinach Kale Quiche

I’ve been eating a lot of salads lately, trying to get some extra leafy greens into my diet and it’s cheaper to buy huge package of it- we had some that wasn’t going to last much longer so the wife found a quiche recipe and we switched a few things and boom….we have our “In The Kitchen with Sharky and Jackie”!

We’ve made a few other quiches since doing Sharketo but the spinach/kale really added a lot of taste and nutrition!

INGREDIENTS (makes 8 servings)

2 tbsp olive oil
1 tsp minced garlic
1 medium onion
5 oz mixed spinach/kale
6 large eggs
Sprinkle crushed red pepper flakes
1 tsp salt
1/4 heavy cream
1.5 c mozzarella

Preheat oven to 375F degrees and grease a 2 quart baking dish (or you can use a pie pan.)

In skillet, head the olive oil and then add the chopped onion and cook until the onion softens up. Add the garlic and continue cooking for an additional minute. Add spinach/kale, turn using tongs, until it’s wilted.

Add .5 tsp salt and crushed red pepper flakes.

Place everything into a single layer in the baking dish. Make another layer using the mozzarella cheese.

In a large bowl, whisk together the eggs, heavy cream and remaining salt until combined.

Make sure you have given the veggies a few moments to cool off and then poor in the combined eggs, heavy cream and salt evenly.

Bake the quiche for 20-25 minutes. The quiche is done when the edges begin to brown and the center is firm
