Sweet Sharktater Casserole

You will see something like this all over the internet calling it Sweet Potato Casserole- NO- this does not taste like everyone’s favorite sweet potatoes covered in marshmallows and none of those others do either. You can’t just call other things what you want and pretend it tastes the same and Sharky isn’t going to lie to you like most other people. You can’t just pretend cauliflower is everything from ice cream to a Snickers bar…just be honest with yourself.

Now..this was the SURPRISE hit of Sharketogiving…all thought it was amazing. While these don’t taste like actual sweet potatoes, they were amazing and a great, low carb substitute.

We break this up into two areas…the veggies and the topping.

8 servings (together)


4 cups butternut squash
4 cups cauliflower
2 tbsp melted butter
1 tsp cinnamon
3/4 tsp garlic salt
1/2 tsp black pepper
4 tsp erythritol


1.5 cups pecans
1/3 cup erythritol
1 tsp cinnamon
1/8 tsp garlic salt
2 tbsp melted butter


Some people like chopping up the pecans in these types of recipes but we prefer leaving them hole so you get a good crunch. Mix the pecans with the sweetener, cinnamon and garlic salt and stir them into the butter until the mixture is crumbly.


We got the butternut squash and cauliflower in the quick, microwavable steam bags…we like to keep things simple. Microwave the squash and cauliflower based on the directions on the bag.

Puree the veggies in a food processor or high powered blender, until smooth.

Stir the sweetener, spices and melted butter into the puree.

Transfer the puree into a 2 quart ceramic or glass casserole dish.

Smooth the top with a spoon or spatula.

Mix all the topping ingredients together and sprinkle over the casserole.

Bake the casserole in the oven for 20 minutes at 400 F degrees.
